an ahhh haaa moment

At work tonight one of my co-workers was commenting on this older man flirting with her and I said "well you said you wanted to find an older man this time". I said well the universe doesn't know how old!".. " I also said you have to think of the things you do want, the age 45, educated, nice, attractive, rich ect ect.

I explained that one time I was putting out my I don't want list. I don't want some one that drinks, or does drugs ect ect and that's exactly what I attracted into my life! I was miserable to say the least.

As I was listening to myself speak these words I was amazed! yes it applies to every area of your life. I was like ahh haaa! what happened that something finally just clicked within me. I was thinking well duh, you know the rules why would it be any different for any area of your life you want to improve? Well the answer is it isn't any different. I have been reading books for years on self-help, positive thinking, affirmations I know the rules and what to do.

All that comes to mind at this moment is maybe I was never really ready until this moment. I have to be serious after all, if I really want a better life. I know sometimes we just have more lessons we need to learn until we are really ready and serious about anything in our life that is important. I refer back to things I read all the time and keep all my books handy. My books are never loaned out, I am weird like that. I always have to have them on hand you just never know.

The first thing I am going to do is start a list of all the things I do want in my life. I am throwing out my I don't want list tomorrow it no longer supports my needs. I guess I well be conducting an experiment I will keep you updated on my progress, nothing happens over night. We all want things now and don't like waiting but as the saying goes "all good things come to those who wait."

Your mind craves to know what your heart already knows. Your mind wants all the information and whys and wherefores. Your heart already knows all that exists above the details that the world finds so significant. The world makes much of what, which from a vaster perspective, is nothing at all.

Talk about a tempest in a teapot! The world is filled with teapots filled with raging tempests, which are, when all is said, much ado about nothing.

Come to the calm sea within you where I AM. Here is the Stillness, and here is Truth, and here you are as well, you who knows all that matters and knows it very well. Come back to that Silence. Enough running around outside you for a while. Come back to the Calm Ocean. Enough churning the waves. Enough flapping wildly.

Come, sit down with Me. In this silence of Ourselves, you will know all that I know, and that is Everything, everything that matters, that is.

It is not like you will think: "Oh, this doesn't matter." You will instantly, instinctively, intuitionally know All That Matters. You will not pick and choose. You will simply know.

The world may very well be bewildered by what you know. It is good for the world to know that it is bewildered. The world has had times when it was sure it knew everything to know, taxes, laws, government, and such. The world knows controlling all right, but it does not always know true governing, beloveds. True governing doesn't come from control. True governing does not dangle rewards or penalties before you. True governing comes from a higher place. It comes from consciousness. Of course, it does.

On what plank are you sitting right now, beloveds? Let consciousness rise so high that each individual within the Oneness governs himself.

Laws have not stopped theft. Laws have not stopped crimes. The Ten Commandments have not stopped all they command. The Commandments are guidelines for a world that seems to need guidelines. Raise your consciousness, and you will not need laws and its relatives. Consciousness comes first, beloveds. Closeness to Me comes first.

The only way to be tall is to be tall. You may not be able to be physically taller than you are, yet you can contribute to the height of your consciousness. Have the intention, beloveds. Have the intention to come from a high place where you can only live with love and consideration for all.

Who says life has to be toil and trouble? Who says that life must be effort?

Naturally, if you want a book that you left upstairs, you have to get up from the chair you are sitting in and climb the stairs. Why not have getting out of your chair be effortless? Why not have climbing the stairs be effortless? Why not have life be effortless rather than effortful? Even the word effort itself saps your energy. Sense of effort makes even lifting your little finger heavy.

Of course, effortlessness does not mean idle, beloveds. It doesn't mean snapping your fingers for the valet to come to tie your shoes or your wife to bring you coffee. Life is movement, beloveds. Get up.

Effortless means oiling the gears. What would the oil be that allows your life to be effortless? What is the oil that makes life easier for you? What is the oil that allows you to get up out of your chair with alacrity? I say, down with effort and up with joy.

When you are happy, it is easy to get up. When you are happy, you are not telling yourself that you are tired.

It is life you get up out of your chair for, beloveds.

Imagine your life if you knew, absolutely knew, that you would be meeting with Me by the end of next week. What would not be easy for you? What could possibly wear you out when you knew, absolutely new, that at 7 a.m. on a certain sunny day, you and I would be meeting in a close embrace? What could possibly tire you when you knew, absolutely knew for yourself, that you and I have a firm date, and there can be no delay? If you knew the time of Our meeting, even if you had to dig ditches from here to Tuesday, how heavy would the shovel feel?

Why, you would jump for joy. You might even have a shovel in each hand, so happy you would be.

You don't even have to know what meeting Me actually means, and still you would be happy. Would I appear as a Human Being to you? It is possible that I would appear to you as a Human Being. It is possible that you would recognize Me. Would you see My face smiling at you? Would I lift you up in My arms of love and hold you tight and never let you go? Would I turn you into a star that lights the Earth? Would I ever put you down?

How would I appear? Would I be a light entering your heart? Would I be the blood flowing through your veins?

Would you hear Me speaking to you? Would I sing you a lullaby? Would I take you on a tour and show you around?

Would I be the quickness in your step? Would I be the leap of your heart?

I could be anything at all.

I could be the light in your eyes.

I could be the skill in your hands as you weave the Universe.

I could be the paint you splash. I could be the painting you paint.

I could be the music you sing. I could be the music you don't sing.

I could be the next voice you hear.

I could be the love and eagerness you feel right now.

What could I not be? What have I not been?

Chili Verde

1 lb of beef stew meat
1 lb of pork stew meat
3-4 large potato's cut into large square pieces
1 large onion cut into large pieces
1-2 cloves of garlic diced small
1 can of beef broth
2 cups of water
2 cubes of butter
1/2 cup of flour
1/2 teaspoon cumin
1/2 teaspoon chili powder
1 tbsp of red chili flakes

1 package of flour tortilla's

Salt and pepper beef and pork stew meat

In a large sauce pan add beef broth and 2 cups of water, turn on medium heat and put in potato pieces and onions bring to a boil and lower heat

Coat pieces of beef stew meat in flour make sure each piece is coated well with flour, In a large frying pan melt down one cube of butter place pieces in frying pan and brown when beef stew meat is well browned dump all beef and drippings into your large sauce pan

melt down your remaining butter and add your pork stew meat make sure each piece is covered well with flour, If you have any remaining flour just add to pork stew meat
brown well, dump all the pork and drippings to your sauce pan

add seasonings cumin, chili powder, and red pepper flakes cover and let simmer on low heat about an hour stirring occasionally to make sure nothing is sticking

mixture should become thick because of flour

if mixture is not think enough mix some flour in cold water to avoid lumps and add to mixture

This is not an original chili Verde recipe It is awesome

Chicken Enchiladas

What you will need to prepare these chicken enchiladas

3-5 Large boneless chicken breast
1 can cream of chicken soup
1 small can of green enchilada sauce
1 large can of red enchilada sauce or 2 small can's
1 can of green chilies
1 bunch of green onion
1 can of sliced olives
1 package of flour tortillas I usually get a large package
1 bag of Mexican blend of cheeses
sour cream
and cream cheese
a lil cumin
and chili powder

first you boil your chicken breast in large sauce pan make sure water covers all chicken pieces. I boil the chicken for about one hour on medium heat, I add salt and garlic to the water when boiling my chicken

When chicken is done I place the chicken on a cutting board and allow to cool down for about 15 minutes. When chicken is cool I cut all the chicken up in small chunks

I also slice up my green onions

I drain my can of sliced olives I use black olives

In a large skillet I add my cream of chicken soup and green enchilada sauce and mix them together I then add my can of green chilies, then add all my chicken chunks to my sauce mixture on low heat, When everything is warmed up I add my 1/2 olives and 1/2 my green onions and mix it all together well I add 1 table spoon of sour cream and a heaping table spoon of cream cheese and mix them in well until cream cheese melts down and blends in.. I add a little cumin and chili powder and salt and pepper. I then remove my pan from the heat and set aside. I allow my mixture to cool down for about 5 minutes

In a large casserole pan I add one can of my red enchilada sauce, on a clean surface I lay out my flour tortilla and add about two heaping table spoon of my chicken mixture and roll up my tortilla and the place it in my pan. I just continue this until all chicken mixture is gone. this makes about 13 enchiladas or more

When my pan is full I pour one can of enchilada sauce over the top of my chicken enchiladas with a spoon I make sure all my tortillas have sauce all over them I then top with cheese my left over olives and green onions I bake my enchiladas for about 30 minutes at 350 degree's

Serve with your favorite sides Mexican rice, refried beans

I was wondering if you love candles like I do? When I go shopping I am sure to pick up a new candle I have so many I don't even know where to put them all. I came up with an idea for my older candles I have burned and the wick disappears. Have you ever had that happen to you? I finally went out and bought a candle warmer they are wonderful for using those old candles you don't want to through out because you loved the scent.

I use an old glass candle holder like from glade, to get the old candle residue out I run warm water in the glass and the candle slips out. I then cut pieces of the candle off and put them in my clean candle holder and set it on the candle warmer.. I can still smell my favorite scent and not waste my candles I just keep adding more candle pieces when needed..

The Big C

A year ago my mom was diagnosed with Cancer she was given a year to live. Its been a very difficult time for All of us especially my mom. She started Chemo treatments probably in January of 2008 She got so sick from these treatment not able to eat. She said things tasted like poison when she ate as a result she has lost tons of weight and she was little to begin with. It's hard seeing my mother so sick. We have her on hospice now and everyone one of these ladies are very special and love my mom.

As you can see in the picture she has a growth on her neck that is the cancer and it bleeds now. It will start burning really bad and usually it bleeds afterwords. She can't use her right arm much because of her neck.

My mom loved life and loved doing things she can't leave the house now and mostly stays in bed every day. She has always been the nicest person and never said NO to anyone. She held everything in that was bad she always felt it was in the past and it should be left there. I wish she would of shared more about the things that bothered her.

Every day is busy for all of us my kids my brothers It is a very humbling experience for all of us. We cry and laugh all the time and share some very special moments together. Me and my brothers and my kids all take turns taking care of her and she deserves every second of our time. I am happy to give back to my mom. It is amazing with everything she is going through she still has her sense of humor you never hear her say " poor me, or cry or hardly complain" only when she is in tons of pain. She is an inspiration to all of us I love my mom and can't stand the thought of losing her. She has been my best friend for 19 years, I don't know what I will do.. My mom knows that God has a plan for us all she is not afraid only if there might be pain involved.

So if I am not around I am taking care of the most important person in my life my Mother.

Hamburger and Onions

I am off for a few days and they are going fast. I am so tired can't seem to wake myself up and get motivated. Tonight I am cooking dinner which I don't get to do much with my schedule. I am making a dinner my mom loves or use to. We call it hamburger and onions.

1-2 lbs of hamburger
one whole onion diced
crumbled saltine crackers
1 egg to help bind

5-6 potato's
1/2 a stick of butter or more
1/4-1/3 cup of milk

frozen corn on the cob

Mix all ingredients together in large mixing bowl, once all ingredients are all mixed together start making hamburger patties I make mine about the size of a large biscuit, sprinkle seasonings on top of hamburger I use Lawrys garlic salt and season salt and pepper...I also like cooking my hamburgers in a cast iron skillet because I use the drippings to make gravy.

I make mashed potato's I like making home made potato's I use about 5-6 potato's depending on the amount of people I am feeding I always figure one potato for each person. dice up the potato's or slice and cook in large sauce pan at least thats what I use make sure water covers all the potato's then I boil potato's until done usually about a half hour. I have never timed it actually I just stick a fork in the potatos and if I can pull the fork back out easily then are usually done, poor out all the water add milk and butter and whip until smooth cover pan with lid to keep potato's warm

when hamburgers are done cooking I place them in a pie pan and put them in the oven to keep warm on a low setting. with the drippings in the pan there maybe onions and crackers left I just leave them in my drippings I add about two heaping table spoons of flour and start mixing it in my drippings I want to make a paste like not to dry though.. I want to sautee it a little brown up the flour then I start adding my milk, I prefer whole milk when making gravy I just fill the pan up to about half way with milk I add more milk if needed if gravy is too thick and you don't want it to runny either.

I make my corn by package instructions I usually add a teaspoon of sugar and some salt and boil them 15-20

everyone loves these hamburgers they are different and so tasty.. and with the potato's and gravy they are awesome this is a family favorite you can also add gravy to the top of the hamburgers

I am not a great writer at all. I looked at some blogs already and everyone really gets into this blogging it looks fun. Why am I here like everyone you feel you have something to share that just might be interesting. My title whats a poor girl to do? Every title I came up with was taken and it was late so here I am. It also could be lyrics "Whats a poor girl to do when she is hopelessly in love with you!" Of course that is not the correct line but it will do Journey "The Party's Over"

So here I am ready to share things of interest to me. I am sure more and more will unfold as I get going here.
